Here's my debut attempt at making Kaju Katli using this recipe!
Ingredients
- 1 cup cashew nuts
- 1/2 cup sugar (for making sugar syrup)
- 1/4 cup water (for making sugar syrup)
- 1 tsp ghee
- 1/4 tsp of cardamom powder
Directions
Step 1:
Grind the cashew nuts into a fine powder using a blender.
Step 2:Mix the sugar and water in a non-stick pan over medium heat, stirring until the sugar dissolves and a syrup forms.
Step 3:Reduce the heat to low and stir in the cashew nut powder and cardamom powder to the syrup until the mixture forms a dough-like consistency.
Step 4:Fold the ghee into the cashew dough.
Step 5:Turn off the heat and cool the cashew dough for a few minutes.
Step 6:Sandwich the cashew dough between two sheets of parchment paper and roll it out with a rolling pin.
Step 7:Chill the rolled cashew dough for a few hours.
Step 8:Cut the chilled cashew dough into diamond shapes.
